I love summer days. Days of joy filled with sunshine and outdoor meals. These are some of my favourite days and probably yours too. In order to cherish these days and spend as much time outside as possible, having outdoor meals has become a must for me.
I love sipping on my black coffee in the morning whilst the sound of the earliest birds songs are slowly bringing the sun up. Around dinner time, I take out the sun umbrella and set up the table for a chilled dinner in the shadow, and in the evening, a *little (*not so little) snack is well savoured as the sun waves goodbye for the day. Don’t know about you but as you can tell, I love my outdoor meals. If your living space doesn’t make it possible for you to have outdoor meals on a terrace or a balcony, have yourself a little picnic in the park when possible. Because who doesn’t love picnics, right?
So guess what I did today? Had dinner outdoors. What’s about to follow in this post are snaps of today’s dinner and no, – not e v e r y dinner ends up this fancy BUT you get the idea. It was an absolutely ah-mazing day, not just because of the dinner which I’ll be telling you about, but because of the beautiful weather we’ve been sent here in Norway. (If you know where the saying in italics is from then you’re in my gang hah!)
Everyone knows I’m obsessed with Italian cuisine. In fact, that’s the only cuisine I could live with for the rest of my life and I’m not even joking. I love my pizza and pasta, just how I love my lasagne. The photo doesn’t even make its justice – it looked and smelled delicious! I mean, can you even imagine the torture I went through before sitting down and eating? You know, #bloggerlife aka the struggle is real.
A salad on the side is definitely a must! Firstly, it makes everything taste better and secondly, it makes me feel better about myself. Hey, something is still healthy here! A green salad made of cucumber, little gem, parsley and spring onions. I added a bit of a dressing, (olive oil, spices and lemon juice) and added it to the table. In addition, a pink lemonade was also added to the table.
Wonder how it got pink? Well, all you need is non-alcoholic concentrated syrup in pink or any other color you may wish, water, mint leaves and of course, rose petals for extra fanciness.
